Ingredients:
- 1 medium apple, peeled, cored, and chopped
- ¾ cup sunflower oil (or coconut oil)
- 1½ cups all-purpose flour
- ¾ cup icing sugar, plus more for dusting
- ¾ cup ground almonds (almond flour)
- 1 heaped teaspoon ground cinnamon
Directions:
- Preheat the oven
- Preheat the oven to 320°F (160°C). Line a baking tray with parchment paper.
- Blend the wet ingredients
- Place the chopped apple and sunflower oil in a blender. Blend until completely smooth.
- Mix the dry ingredients
- In a large bowl, combine the flour, icing sugar, ground almonds, and cinnamon. Mix well to evenly distribute the ingredients.
- Form the dough
- Add the apple–oil mixture to the bowl. Mix and knead until a smooth, cohesive dough forms.
- Chill the dough
- Cover the dough and refrigerate for 30 minutes. This helps the dough firm up and makes it easier to roll and cut.
- Roll out the dough
- Place the chilled dough between two sheets of parchment paper. Roll it out to about ¼-inch (6 mm) thickness.
- Cut out the cookies
- Remove the top sheet of parchment paper and cut out star shapes using a cookie cutter. Transfer the cookies to the prepared baking tray.
- Bake
