Ingredients

  • 2 ripe bananas (the riper, the sweeter)
  • ½ cup chia seeds
  • 2 cups milk of choice (dairy or non-dairy)
  • ½ teaspoon vanilla extract
  • 1–2 tablespoons sweetener of choice (optional, such as honey or maple syrup)
  • 1 tablespoon cacao powder
  • 2 tablespoons cacao nibs

Directions

  1. Peel one banana and place it in a medium bowl with the chia seeds. Mash together with a fork until well combined and paste-like.
  2. Add the vanilla extract and milk, stirring until fully incorporated and smooth.
  3. Divide the chia mixture evenly between two bowls.
  4. To one bowl, add the sweetener (if using) and cacao powder. Mix well until evenly combined.
  5. Cover both bowls and refrigerate overnight (or at least 4 hours) until thickened.
  6. To assemble the parfait, spoon the cacao chia pudding into the bottom third of a glass or jar.
  7. Add a layer of vanilla chia pudding, placing slices of the remaining banana against the sides of the glass if desired.
  8. Finish with another layer of cacao chia pudding. Top with banana slices and cacao nibs before serving.
