Ingredients
- 1 cup sunflower seed butter
- ½ cup dairy-free margarine, softened
- ½ cup white sugar
- ½ cup brown sugar
- 1 egg (or substitute 1 tsp. baking powder + 1 ½ T. water + 1 ½ T. oil)
- 3 T. soy milk (or another dairy-free milk)
- 1 tsp. vanilla extract
- 1 ½ cup flour
- ¾ tsp. baking powder
- ¼ tsp. salt
- 1 ½ cup ‘enjoy life’ semi-sweet chocolate chips
Directions
- Preheat oven to 375°F.
- Line 2 cookie sheets with parchment paper.
- Mix margarine, brown sugar, sugar, and sunflower seed butter in a bowl.
- Slowly mix in egg (or egg substitute), dairy-free milk, and vanilla.
- In a separate bowl, combine flour, baking soda, and salt. Combine with sugar and egg mixture.
- Stir in chocolate chips.
- Drop by teaspoons on cookie sheet. Bake for 10-15 minutes (check to see that the edges are golden brown).
